I wish I knew this 10 years ago

I would NEVER have followed a vegetarian diet if I had known then why I felt so terrible when I ate meat!  

It wasn't because I wasn't "supposed" to eat meat.  It was because my digestive system wasn't working right!  I didn't have adequate digestive enzymes or stomach acid to properly break down any of my foods, especially proteins.  The answer isn't to stop eating proteins - it's the most important macronutrient!  

I spent far too many years doing damage to my body by not getting adequate proteins or healthy fats and eating far too many carbs (plants are essentially all carbs).  This ended up wiping out my gut microbes (yes, even with all that fiber), caused fat-soluble vitamin deficiencies (vitamins A, D, E, and K), and led to muscle loss from inadequate amino acids.  And, yes I was eating a whole food vegetarian diet (not a Doritos and Oreos kind of vegetarian diet).  This didn't serve me at all.  I ended up with chronic muscle soreness, frequent migraines, insulin resistance, unexplained weight gain (eating nothing but plants), and a high level of inflammation.  

I'd love to know from you...what do you wish you knew 10 years ago that you know now?
